Master Mix

6 cups flour
1 tablespoon salt (optional)
1/4 cup plus 2 tablespoons baking powder
1/4 cup plus 2 tablespoons sugar
2 cups powdered milk

To make pancakes:
1 ½ cups of the master mix
1 cup water
1 egg
2 tablespoons vegetable oil
Whisk everything together and fry on a hot, lightly greased griddle or frypan. Each batch serves 3 to 4.
